I had spotted this first dish in a magazine but I didn't know if it could meet my tastes, then curiosity won and I tried this unusual zucchini carbonara with sea bass, I changed my mind, it was excellent! The original recipe involved filleting the sea bass raw and cooking it together with the zucchini, for convenience I preferred to cook the fish for a few minutes first so as to more easily remove the bones and skin. Another thing, if you find them, use the half paccheri, I would have used those if Elisa had not decided to steal the packet of pasta, sit on it over and over again so as to make it become pasta;) Well I salute you and I recover at work, see you later :)

Method

How to make paccheri with zucchini and sea bass

Clean the sea bass (click here to see the procedure with step by step photos) and cook it for 5 minutes in a pan with a drizzle of oil, 1/2 glass of water, 1 clove of garlic and parsley

remove the skin, remove the head and the bones and place the fillets obtained on a plate

Peel the courgettes and cut them into cubes, then brown them in a pan with oil and a clove of garlic for about ten minutes

Now add the sea bass, add salt and pepper and cook for another 5 minutes

Meanwhile, prepare a beaten egg with the pecorino in a bowl

Cook the pasta in abundant salted water, drain when al dente and pour into the pan with the sauce
Add the beaten egg and sauté everything in the pan for a couple of minutes.

serve the pasta with sea bass and courgettes on plates
