The Caprese cake is a classic of Neapolitan pastry; Caprese is, according to tradition, a chocolate and almond cake, crunchy on the outside and soft on the inside, low and rich in dark chocolate.
Many people have preconceptions about the caprese because they think it is a dry dessert, nothing more false! the caprese is very soft and moist, not dry;)
The caprese cake has an emotional meaning for me, it is the first dessert that I prepared all by myself thanks to the recipe given to me by my friend Peppe chef who "introduced me to the kitchen". Being a cake whose recipe does not include the use of wheat flour, it is also suitable for celiacs.
How to make the caprese cake
Melt the dark chocolate with the butter in the microwave or in a double boiler.
Transfer the melted chocolate with the butter into a bowl and add the sugar, cocoa and chopped almonds, mixing everything well. Now add the eggs one at a time as they are incorporated into the dough, stirring vigorously with a spoonful of wood.
Pour the mixture into a greased mold.
Cook the caprese at 150 ° C for 1 hour in a preheated oven.
Check the cooking by testing the toothpick: if it comes out clean and dry, the caprese is ready.
Allow the caprese cake to cool before turning it upside down on a serving dish.
Only when it is cold sprinkle it with icing sugar. Now take a bucatino and write "caprese" on your cake
Cut into slices and serve.
