The sponge cake is a very moist and buttery English cake, ideal to be used as a base in multi-level cakes and coated in sugar paste. Today is my little star's birthday and as I had anticipated, her birthday cake this year will be marine-themed and with 3 floors, one for each year of her life so I needed a base with a certain "thickness" and I decided to try the sponge cake recipe, perfect. I'm at a good point, the basics are ready, the decorations as well, now I just have to wait for my sister and assemble the cake and hope that everything will hold up, I have studied various tutorials and I hope everything goes well. Every year for Elisa's birthday I would like to do who knows what, I look for the perfect gift, I buy her a princess dress, I try to make her spend a day to remember by organizing a party with the people she loves most and preparing a special cake for her but it seems to me that is never enough. Three years ago I had the greatest gift I could ever receive, becoming a mother, Elisa has brought wonder into my life, with her it has a whole new flavor, since she was born she has been a small dispenser of joy, love, cuddles and I smiled and there's nothing I wouldn't do to make her happy. How to make sponge cake
Put the softened butter, sugar and vanilla in a large bowl
Whip until creamy
Add one egg at a time, incorporating each egg well before moving on to the next.
Now add the sifted flour together with the baking powder in two times
Whip until a homogeneous mixture is obtained
Cover a mold with parchment paper or grease and flour a springform pan, pour the mixture inside
Level with a spatula then place in a preheated static oven at 180 ° and cook for about 40 minutes
Once the toothpick test is done, turn off the oven leaving the cake inside with the door open for about ten minutes
Then use your sponge cake as a base for your cakes or served in nature with a sprinkling of icing sugar.
