We are about halfway through Lent. Even though I shared, a few weeks ago, the Best Recipe Ideas for Lent, I realized that I haven’t posted some of my favorite seafood ideas yet on the blog. Including this Best Baked Cod Recipe!

We raise cattle and love our beef around here, but having a great seafood or fish option also makes my heart go pitter-patter.

One big drawback of living in the Midwest is how far away I am from an ocean and fresh seafood!

One positive, is that many local grocery stores carry some great seafood options at their meat counters, as well as in their frozen food section.

Which is what I went with when I made these!

Just add a few simple pantry items to make the baked on crust and these cod filets are so good, you won’t need to add anything extra.

Hold the tarter sauce y’all!

Stir together Parmesan cheese, melted butter, mayonnaise, lemon juice, Old Bay seasoning, basil, pepper, and a dash of hot sauce.

Pour over the cod filets and bake.

In about 10 to 25 minutes, depending on the size and thickness of the fish, you will have a light and delicious meal that the whole family will love.

One of cod’s best loved incarnations is as part of a fish supper, and whether battered or breaded, baked or fried this is undoubtedly a British classic. Prepare all the vegetables and fish. Place everything in one layer on a baking sheet. Season with garlic parsley seasoning salt, and place chunks of butter over the top of vegetables and cod. Bake at 400°F for 15 minutes.

Bake cod at 400°F for about 15 minutes. Salmon is ready when its internal temperature reaches 145°F.


How to Cook Cod

The last thing you want is dry cod. It happens to the best of us, but follow these step-by-step instructions for some absolutely moist cod:

  1. Heat a pan over medium-low heat (don’t cook cod on high heat, it will burn and cook unevenly!) with two generous pats of butter.
  2. Place cod in the pan. Season generously with garlic parsley salt. Cook for two minutes.
  3. Flip over and cook for another 4 minutes. Season this side with garlic parsley salt.
  4. Remove from heat. Immediately drizzle lemon juice all over the top. Sprinkle with freshly chopped green onion.


Baked Cod Ingredients:

This baked cod recipe is easy to prepare and the cod is really juicy, tender and packed with delicious flavours. There are not many ingredients that are needed especially to flavour the fish.

  • Cod loins – skin off
  • Salt and Pepper – to season the cod with

  • Leek – gives some sweetness to the tomato sauce
  • Peppers – great flavour and sweetness

  • Capers – give an amazing flavour and go very well with any fish
  • Herbs – for delicious flavours – I have used thyme and parsley
  • Salt and Pepper – just to season well the sauce too
  • Coconut Oil – to get the cooking going and add some extra good fats to the dish since cod is a pretty lean fish.

BEST COD RECIPE

So I changed the recipe up a bit and put my own little spin and it’s seriously the best cod recipe out there.

It’s basically garlic, shallots, tomatoes, spices and broth simmered until tomatoes burst and release their juices. Then you stir in the butter and fresh herbs and OMG!

The result is velvety, thick, slightly spicy and sweet butter that you will want to eat by a spoonful. It truly is.

This melted butter sauce over baked cod is one delicious baked cod with butter dinner. Plus all those juices on the bottom of the pan…(my heart) ♥

To bake the fresh cod. All you need to do is pre-heat the oven to 400 F degrees. Toss the cod fillets with little olive oil, salt, and pepper. Place in a baking dish and bake for 15 minutes or so, depending on the thickness or until easily flakes with a fork.

You can serve it with rice, quinoa, or my favorite…crusty bread to soak in all the juices. I mean does it get better than that!?
