Cauliflower Pizza Recipe of 06-02-2016 [Updated on 06-05-2019]

The so-called cauliflower pizza is a particular dish that obviously has only the appearance of pizza. The base, in fact, instead of being made with the classic mixture of water, flour and yeast, is composed of cauliflower, a fake pizza in practice;) This dish turned out really tasty and then it is suitable for my celiac friends and also for the vegetarian ones, a real wild card. The only one who turned up his nose this time was Ivano who, excited at the sight of the margherita pizza on the table, was disappointed to see that the base was cabbage, one of the ingredients of his black list;) I leave you to the recipe friends and happy Saturday!

How to make cauliflower pizza

First clean the cabbage, wash it and divide it into florets.

Put the florets a little at a time in the mixer and chop them.

Transfer the mixture to a bowl, add the egg whites and cheese and season with salt and pepper, then mix.

Move the mixture onto a mold covered with parchment paper and flatten it and press it with your hands.

Add a drizzle of oil and cook in a preheated convection oven at 180 ° C for about 20 minutes or until it is dry and crisp.

Prepare a light sauce by heating the puree with salt and oil for a few minutes in a saucepan.

Sprinkle the sauce on the cauliflower base and add the well-drained slices of mozzarella.

Bake in the oven, still at 200 ° C, for another ten minutes, let it cool and serve the cauliflower pizza.

  • half cauliflower
  • 1 cup of wholemeal or rice flour
  • half a cup of chickpea flour
  • 3 tablespoons of chia seeds
  • 5 tablespoons of water
  • salt
  • seasonings to taste

Take the cabbage, cut it into small pieces and put it in the mixer, chop everything up to reduce the cabbage into tiny pieces like couscous. Once this is done, pour your cauliflower couscous into a bowl and add the flour and salt. In a separate container put the chia seeds with 5 tablespoons of water, let it rest 15/20 minutes so that the seeds increase their volume, after the time take the immersion mixer and blend the mixture, it will become a sort of thick "pap". Now we are ready to make our dough, pour the blended chia seeds into the container where you put the cauliflower and flour and mix. As if by magic it will mix everything as if it were a normal pizza dough, if it is too liquid you can add flour until you get the desired consistency. Form a smooth and homogeneous ball. Turn on the oven to 200 degrees static mode, cut a piece of parchment paper and place your dough on it, roll it out with a rolling pin with the help of a little flour. This is the dough rolled out before cooking:

When the oven is at temperature, bake the base and cook for 20 minutes. After the time has passed, take out and season your pizza as you prefer, you can indulge yourself, bake again for 15 minutes. Your pizza is ready, you will notice the goodness, you can eat and be happy without too many remorse. & # X1f618

Preheat the convection oven to 200 °. Combine the ingredients you need to prepare the dough: grated cauliflower, egg, soy flour, salt and oregano.

Mix well (eg with the help of a fork).

Spread the dough evenly on a baking sheet covered with parchment paper. The less thick the dough is, the crisper the result will be.

Bake for about 15 minutes and remove from the oven when the base has lightly tanned.

Garnish the base to taste and bake in the oven for another 3-5 minutes. (I put cherry tomatoes, olives and the other oregano.)

After cooking you can add parmesan flakes.
